Photograph the pan mid-cook, a chef marks what's going wrong

the moment you can still fix it is while it's in the pan, not after. photograph it and get the marks drawn on: this bit's crowded, that's steam not sear, the fat's too cool. mine said 'you're cooking four things and heating one' and moved two thighs out. best chicken i've made in the shop.
